Da is passionate on creating novel structures using proteins, polysaccharides or their mixtures for food texture modification, nutrients delivery, sensors and tissue engineering. He also has deep interests in quality improvement of food products fulfilled through emerging processing technologies.

Improve the quality attributes and nutrition of dairy and plant-based food products by processing and bioprocessing. And valorize food byproducts for sustainability and health promoting effects.
