In today’s society there is a need for food products that can minimize the risk of metabolic syndrome related diseases such as cardiovascular disease and diabetes. I work to develop new ways to isolate, purify and modify non-digestible carbohydrates (prebiotics) that can selectively stimulate the good bacteria (probiotics) in the gut to protect against disease. These products have a great potential for growth and future innovation.
